A round, puffy pastry rolled in sugar and offered with a variety of custard and jam fillings, the paczki is a Polish tradition that has been carried on every Friday morning at Dorothy Ann Bakery and Cafe. The paczki was originally a novel doughnut enjoyed on Tuesdays before the Lenten period of fasting and around the Easter celebration, usually served at Polish churches in the St. Paul area. After the churches slowly stopped serving the pastries, the owners of Dorothy Ann, Joan and Steve Conway, decided to carry on the tradition at their bakery. “We’re pretty proud that we’ve been around for 65 years and carried on a lot of the traditions the original owner began,” Steve says.
