Recipe: Share These Truffles on Random Act of Kindness Day

Random Act of Kindness Day is February 17 - why not share a little chocolate?

February has a very special holiday in it. Not Valentine’s Day, although that’s a perfect day to share a little love for our sweethearts. There’s a day that holds my heart a little more gently. It’s Random Act of Kindness Day on February 17. It doesn’t take much to be kind. As a matter of fact, being kind can bring a sense of peace to both the receiver and the giver. Buy a coffee for the person in line behind you or simply hold the door for someone. Then, keep those random acts of kindness going. Of course, we can still share chocolate on this day. That’s pretty kind, if you ask me.

Guiltless Truffles
Combine 1/3 cup (4 oz.) of dark chocolate chips and 2 tablespoons of non-dairy coconut creamer, like So Delicious Vanilla. Melt in microwave in 20 second increments, stirring each time, until the chips are nearly melted. Stir until completely smooth. Pour into a cocoa powder-dusted ice cube tray or a heart-shaped silicone ice cube tray. Refrigerate until firm, about 2 hours. Remove from tray and toss with sifted cocoa powder. Makes 12 truffles. Store chilled for up to five days.
