This recipe originally appeared as part of the story United We Eat in the October 2019 issue.
When asked if there was a quick and delicious recipe he could share with us, United Noodles owner Eric Fung’s mind immediately started spinning with dozens of favorites. In general, his favorites would be anyone’s favorites: Comfort foods that inspire nostalgia and make you think of things you enjoyed as a kid top the list.
As any true “foodie,” he spouted out a simple no-recipe recipe—a dish with just a few ingredients that you make the way you want.
Lap Cheong Fried Rice
- Jasmine rice (preferably left over from last night)
- Beaten egg, softly cooked separately from everything else and then tossed together at the end
- Green onion
- Lap cheong, a sweet Chinese sausage, thinly sliced and sautéed
- Season to taste with white pepper or hondashi
Mix everything together, and enjoy.
